A Carby Day

Or at least it was supposed to be!

Today is Day 30 of the Wego Health Activist Writer’s Challenge and I made it!  I really wasn’t sure that was going to happen, but I did.  I did take the 2 get out of posting free days, but I played by the rules and only took those 2 so I guess that still counts as making it!

Today is my birthday and thought I would bake something for myself.  The cake that I really like (peanut butter meltaway cake) is very carby – it has 94 grams of carbs per regular sized piece.   I decided that I would bake banana bread instead.  I can’t even remember the last time I baked that. I learned a lesson, look at the recipe before deciding something would be “easy” to make!  I pulled the recipe out and only looked at the ingredients so I could get what I needed for it.

First, the store didn’t have any ripe bananas.  They always have a bunch of loose, ripe bananas laying there.   After I got home and looked at the recipe, I realized how much work it was going to be.  You have to sift 3 cups of flour.    After you sift the flour, you have to sift together the flour with the sugar and other dry ingredients.  Then I had to crush two bananas and beat and egg.  Who needs a treadmill!

I used mini loaf pans.  After I put them in the oven, I cleaned up the mess I made and walked over for the mail.  When I came back in, I could smell something burning so I went and looked in the oven.

Another lesson learned, if you put mini loaf pans in the oven, put them sideways so they don’t fall over.  Now I get to clean the oven too!

The recipe said to cook for 1 ¼ hours – I didn’t even have mine in for an hour and they were pretty brown.  I couldn’t remember how much they grew and I obviously filled the pan up too high.  I thought I would give one to my brother, one to an older neighbor that has a sweet tooth and keep one for me.   From the looks of these, I don’t think that is going to happen!

    Hey Kelley,
    I used to teach culinary arts at a college in NH and baking was my specialty. First off don’t throw the mangled bread out – tear it in pieces in a 8 x 9 casserole baker,( maybe 4 cups bread) add milk 2-4 cups skim, sweetener (I use stevia) ,eggs – I use 1 egg for each cup of milk. Bake @ 325 degrees for about 1 hour (larger sizes take much more time [banana bread issue]) and if you don’t like that use it crumbled with frozen yogurt. For a special occasion add a dollop or two of Smucker’s Sugar Free Hot Fudge sauce or another flavor.
    Now I’m hungry!

    • Thanks Dianne. I didn’t throw the bread out. It tasted pretty good but didn’t look nice enough to give away to people! I will have to try your suggestion. Thank you for the birthday wishes!
